Chocolate Shortbread Cookies

Learn how to make delicious chocolate shortbread cutout cookies for Valentine’s Day! These cookies are so soft and have the perfect balance of sweetness, which make them a hit with family and friends.

It wouldn’t be Valentine’s Day in my family without making these chocolate shortbread cookies. Since I was little I have been making these cookies with my mom for every Valentine’s Day party we have.  

For Valentine’s Day parties we make these cookies in advance, then get the kids and even adults to decorate their own cookies.  I have brought these cookies to school, daycare, Sunday school, and Bible study and they are always a favourite.

This recipe is one to add to your book and make year after year.  Chocolate, soft, chewy and perfectly sweet, this cookie is one you and your family will love!

Tips For Making Chocolate Shortbread Cookies:

  • Use good quality cocoa. Being the frugal person I am, I have tried making these cookies with the cheapest cocoa at the store but they just don’t have the same depth of flavour as when made with the good stuff. 
  • Make sure to not overbake the cookies. These cookies only take between 5 and 7 minutes to bake. Since the batter is brown it can be hard to tell if the cookies are done, but leaving them in longer than 7 minutes will make your cookies go hard and not the beautiful soft texture they should be. 
  • Top with royal icing. One thing I love about these cookies is that they are not overly sweet, which means they can handle some icing. I find royal icing looks beautiful and tastes great on these chocolate shortbreads.

Recipe Yield:

This recipe makes approximately 20 cookies, but that will vary based on your size of cookie cutter.  

In the video I said that this recipe made a big batch, and I realized after that is only because my family usually doubles or triples the recipe for Valentine’s Day parties.  If you want to make a bigger batch this recipe can be easily increased with great results.

Storing Cookies:

After baking and decorating, store the cookies in an airtight container. 

They will last on the counter for about a week. They can also be put into the freezer and last for 3-6 months. 

My mom often makes these cookies up in advance and freezes them plain. Then she takes them out of the freezer the day of the party, makes up some icing and let the kids decorate their own cookies.

Chocolate Shortbread Cookies Ingredients:

 ½ cup butter

¾ cup white sugar

1 egg

1 tsp vanilla

1 ½ cups flour

½ cup cocoa

½ tsp baking powder

½ tsp baking soda

¼ tsp salt

 

Chocolate Shortbread Cookies Directions:

1. In a bowl cream the butter, sugar, egg and vanilla.

2. Next, in a separate bowl combine the dry ingredients.

3. Add the dry ingredients to the wet ingredients a little at a time.

4. Once the dough comes together, form it into a ball and wrap it in beeswax wrap, or other wrap, to keep it from drying out. Chill the dough in the fridge for about 1 hour.

5. Preheat the oven to 325ºF.

6. On a lightly floured surface roll out the dough with a rolling pin.  Roll the dough until it is the thickness of a pencil, which is about ¼ inch. This is what my mother always told us so we wouldn’t go too thin with the dough and today I still get out a pencil to check.

7. Using a cookie cutter, cut out the dough and place it on a greased baking sheet. I used a heart shaped cookie cutter to make them Valentine’s themed but you could make them with any cutter for any event.

8. Bake the cookies for 5 – 7 minutes.

9. Once out of the oven place the cookies on a cooling rack. 

10. When the cookies have cooled completely they are ready to ice, or be put into the freezer.  I used royal icing to decorate but you can use whatever icing and toppings you like best. Have fun and be creative!  My husband loves when I add cinnamon hearts as decorations on the cookies, which adds a bit of a kick.
